Award Winning Vegan easy Creamy Black Bean Soup

Black beans are an excellent legume. They have many benefits such as:

 1) Helps maintain healthy bones. It contains zinc, calcium, magnesium, and copper which all contribuite to health bones.

2) Managing diabetes. Studies show that individuals with a high fiber diet have lower blood glucose levels.

3. Lowering blood pressure. Black beans are naturally low in sodium and contain potassium which have been found to lower blood pressure naturally.

4) Preventing Cancer. Black beans contain selenium, folate, and high fiber which all aid in cancer prevention.

5) Weight Loss. Fiber is an important in weight loss and weight management. It acts as a “bulking agent” in the digestive system. It increases the sense of fullness after eating and reduces appetite.

This Creamy Black Bean recipe is very simple and easy to make. We use canned beans to shorten the cook and prep time. You may substitute and prepare your own beans if you wish.

Recipe:

Ingredients:

 

– 1/4 cup diced red onions
– 1/4 cup diced yellow peppers
– 1/4 tbsp minced garlic
– 1 tbsp coconut oil
– 2 tbsp Chia seeds
– 2 tbsp coconut aminos
– Diced green onions
– one can of low sodium black beans
– 1/4 cup unsweetened almond milk
– 1/4 cup grated Parmesan cheese

 

Directions:

Heat a small pot to medium heat.
Add the first 4 ingredients and cook for 2 minutes.
Add the black beans and simmer for 5 minutes.
Add the Chia seeds.
Transfer the contents to a blender, add the coconut aminos and almond milk. Blend until smooth.
Add to your deep dish bowl. Then sprinkle some green onions.

Optional for Parmesan Crisp:

To make your parmesan crisp, bring a saucepan to medium-high heat add 1 tablespoon of coconut oil.
When it’s hot add the grated Parmesan cheese to the pan and spread around to form a circle.
Let it cook for 3 minutes until golden brown.
Once it’s cooked remove the pan from the heat and let the pan cool with the cheese on it.
Once the cheese hardens then remove it from the pan and you have your parmesan crisp.

    This is a recipe I will make this fall when the weather is cooler. I want to try those parmesan crisps, too. They’s work well with many dishes.

    This looks great! I never think to add chia seeds to soup – I usually only put ’em in baked goods or smoothies – so I love the idea of using them in this kind of recipe.
