S’mores Protein Cake Bars, perfect for National S’mores Day.
August 10th, is one of our favorite celebrated days, it is National S’mores Day! National S’mores day was created a few years ago to celebrate S’mores, and it is sponsored by National Confectioners Association.
There are many variations to this gooey delight. The first s’more recipe was created in the 1920’s and can be found in the book of recipes published by the Campfire Marshmallows Company. The original recipe for S’mores consists of a roasted marshmallow with a layer of chocolate bar sandwiched between two pieces of graham cracker.
We of course had to create our own healthier version,
Delicious and Healthy S'mores Protein Cake Bars
Our own healthy twist of Delicious and Healthy S'mores Protein Cake Bars to celebrate National S'mores day. High in protein, lower in sugar.
- 2 scoops s'mores protein power
- 2.5 cups whole-wheat flour
- 2 tbsp whole-wheat flour
- 1 cup stevia for baking
- 1/4 cup brown sugar lightly packed
- 3 each graham cracker crumbled
- 3/4 tsp kosher salt
- 1/2 tsp ground cinnamon
- 9 tbsp ghee can replace with coconut oil
- 2 tbsp liquid stevia
- 5 tbsp almond milk unsweetened
- 2 tbsp vanilla extract
- 1/2 cup Walden Farms Marshmallow
- 1/2 cup sugar free cool whip
- 1 cup Walden Farms Chocolate Dip
Combine the dry ingredients in the bowl of a stand mixer fitted with the paddle attachment.
Mix on low to incorporate.
Add the ghee and mix on low until it resembles coarse meal.
In a small bowl, whisk together the liquids. Add to the flour mixture and mix on low until the dough barely comes together.
Pour the dough out onto plastic wrap and form it into a one inch thick rectangle.
Press the dough into the bottom of a 9x13 baking sheet (that is either greased or lined with parchment paper.
Adjust the oven rack to the upper and lower positions and preheat the oven to 350°F.
Bake for 17-25 minutes, Until lightly browned and semi firm to the touch.
Cooking times will vary greatly depending on thickness, ovens, and pans used.
DO NOT OVER COOK
Mix together by hand Pour the marshmallow mix onto the base.
Pour the mix onto the base over the marshmallow.
Refrigerate for 30 minutes to firm
