NATIONAL PACK YOUR LUNCH DAY

 

Did you know that March 10th is National Pack your Lunch Day? On this day we are actually cultivating healthy habits, by encouraging everyone to make their own lunch. Prepping your lunch, not only saves you money, it is a healthier option. You can control what goes into your lunch, use fresh and organic ingredients and use portion control. Preparing your lunch does not have to take hours to prepare and it does not have to be difficult.

National Pack your Lunch Day is also celebrated by kids. For kids it is important that we pack nutrient dense foods and skip sugary treats. As we do not want them to be sluggish after lunch. With this recipe you cook once and can eat three times, and it can be used for both adults and kids lunch and/or dinner.

Here is an easy recipe that can be used for both kids and adults.

Shredded Chicken
Brown Rice
Black Beans
Citrus Salad

Shredded Chicken, Brown Rice, Black Beans and tomato citrus salad

Very simple recipe that can be used for the whole family.

Ingredients

  • 4 each skinless/boneless chicken breast
  • 1 each medium onion peeled and sliced
  • 3 tbsp garlic powder
  • 3 each whole lemon
  • 2 tbsp ground fresh pepper
  • pink Himalayan salt to taste
  • 1 cup basmati brown rice cooked
  • 1 can low sodium black bean
  • 3 each green onion chopped
  • 1 each clementine
  • 1 each cucumber
  • 2 tbsp virgin coconut oil

Instructions

  1. Boil water in a sauce pan, once it starts boiling add your chicken breast.

    Boil for about 15 minutes or until cooked.

    Remove from water and place on cutting board, allow to cool.

    Once cool, shred your chicken breast with a fork.

    Season cooked chicken with lemon, garlic powder, salt, and pepper.

    Heat a frying pan and add coconut oil.

    Once hot add shredded chicken in small batches, add onion.

    Saute until chicken is crispy.

    For the Citrus Salad

    Dice cucumber, clementine and green onion. 

    Mix together, add lemon and pepper.

    To plate your food:

    Add cooked brown rice

    Black beans
    Shredded Chicken

    Citrus Salad

For the Kids meal, we took all of the ingredients used to create the adult meal and placed it inside a wrap. Packed a fruit and some pretzels on the side.

Also all of the left over shredded chicken can you be used to make cauliflower pizza, chicken salads, added to pasta, the possibilities are endless
