Am I the only one obsessed with zucchini? We use low carb zucchini to replace pastas, bake cakes and breads, for salads, to make soups, sauteed, you name it we’ve replaced it with zucchini. We do not have a preference, we eat it cooked, baked, sauteed, fried and even raw. If you have not have replaced a starchy pasta with zucchini you are missing out on a great thing! Zoodles are the next best thing to coffee!
One of my favorite things to do with zucchini is to cut it with a spiralizer, makes it spiral and pasta looking. There are many spiralizers available, the one we use is under $20, easy to use and clean. It can be found at Amazon. The spiralizer comes with 5 different blades to cut different vegetables. It can be used to spiralize not only zucchini but carrots, squash, beets and even potatoes. If you do not own one of these, we suggest you purchase one. It will save you time, money and tons of empty calories!

Shrimp on Zucchini noodles with Spinach Ginger Dressing

- 12 each jumbo shrimp, peeled & deveined
- 1 each large zucchini
- 1 tbsp black sesame seeds
- 1/2 each lime juiced
- 1 cup baby spinach organic
- 1/3 cup Makoto Ginger dressing
- 1/2 cup tomato dices
Using a spiralizer, noodle your zucchini and set aside
Boil your shrimp for 3 minutes
Using a bullet, mix the dressing, spinach and lime juice.
Add the dressing to your shrimp and toss them for 30 seconds.
Place your shrimp over your zucchini noodles mix it, and add some sesame seeds and diced tomatoes.
