We are so excited about this Raw Key Lime Pie Protein Cup Cake Pie Recipe!! Ever since we visited Key West last year and had a slice of Key Lime Pie we knew we had to recreate a healthier version of this creamy and delicious dessert! As we know the original version of the Key Lime Pie is so rich and sweet but also loaded with unwanted calories and high in sugar. Our recreated version has added protein and uses a sugar free syrup as a sweetener. The sweetener can easily be exchanged for coconut sugar or Stevia if desired. This raw key lime pie is a no bake recipe and it is a great guilt free dessert!
RAW KEY LIME PROTEIN CUP CAKE PIE RECIPE
RAW KEY LIME PROTEIN CUP CAKE PIE RECIPE is a protein loaded, sugar and guilt free dessert.
- 1 cup almonds raw and unsalted
- 1 cup dates pitted
- 1 dash vanilla
- 1 pinch salt
- 2 tbsp coconut oil
- 6 tbsp coconut oil
- 1 scoop vanilla protein of your choice
- 1/2 each lime squeezed
- 1 tbsp lime zest
- 5 tbsps sugar free pancake syrup we used Walden Farms
- 1/2 cup fat free Greek Yogurt
- 1/2 cup low fat cottage cheese
- 1/2 cup Light Cool Whip
Blends all ingredients in a food processor and press into the bottom of greased muffin tins or one large one.
In a food processor blend all ingredients well until creamy.
Pour on top of bases and freeze for 30 minutes, then move to fridge for 30 minutes. sprinkle with coconut flakes and a swirl of Nutella (optional).
